Italian food featured at Park Hyatt

Diners at Park Hyatt Saigon from May 26 to June 3 will have a chance to enjoy Taleggio cheese, asparagus and cherry tomato salad with parmesan and other Italian dishes prepared by guest chef Roberto Mancini from Grand Hyatt Mumbai in a nine- day promotion.

"The special menu I have prepared comprises regional recipes from central Italy and primarily features delicacies from Lazio and Tuscany," Mancini said. "The menu is authentic and has a variety of seafood preparations that are light and delectable. The method of preparation synergizes innovative cooking and presentation while retaining traditional characteristics."

Recommended signature dishes are saffron and asparagus risotto and champagne flavored and herb-crusted lamb loin. "I am really excited about the chef exchange program between Park Hyatt Saigon and Grand Hyatt Mumbai," Mancini said. He has been executive chef at Baci Restaurant in Shanghai, China. "I am looking forward to experiencing the warm hospitality, culture and tradition of Vietnamese and exploring the myriad aspects of Saigon that I have heard about."
