Chef Michele Gulizzi introduces a special menu of healthy food at Opera Restaurant from 21 June to 5 July 2008. Park Hyatt Saigon’s “Healthy Choice” will delight your palate with an array of tasty dishes, while refreshing your body from the inside.
Using only the freshest of ingredients, Opera’s culinary team will create healthy yet delicious dishes following the principles of the Mediterranean diet. Inspired by the traditional dietary patterns of some of the countries of the Mediterranean Basin, this diet emphasises abundant fruits and vegetables, fish and poultry, dairy products and healthy fats, such as olive oil.
The menu includes a wide variety of Italian-inspired food, including Sea Bass Carpaccio and Tuna Tartar Served With Light Vinaigrette; Raw Vegetable Salad with Red Wine Vinegar; Wholewheat Stracci with Fresh Tomato, Garlic and Basil; Fettuccine with Sautéed Chicken Breast and Zucchini; Baked Tenderloin, Chilli, Rosemary and Spinach; Grilled Chicken Breast with Arugula and Tomato; Baked Lamb Loin Filled with Mixed Vegetables and Roasted Bell Peppers; and desserts with Citrus or Pineapple Granita. Prices range from US$6++ to US$28++.
