Ravioli is a popular form of pasta, comprising rectangular or circular pieces of pasta filled with a wide range of delicious and fresh ingredients. Its name derives from the Italian verb “to wrap” because when it is made, filings are wrapped in a layer of pasta. The fillings for ravioli can be either meat, fish-based or vegetable such as spinach or nettles, often combined with a soft, creamy cheese called ricotta.
There are many versions of ravioli for this promotion. Chef Michele will create sumptuous dishes including Goat Cheese Candies with Pear Sauce and Balsamico Reduction; Red Cappellacci and Braised Lamb with Stracchino Cheese and Vegetable Ragout; Black Ravioloni with Porcini Mushrooms, Clams and Truffle Tapenade; Lobster and Onion Ravioli with Butter Scampi Sauce and Sun Dried Tomato Powder; and Saffron Fagottini with Foie Gras, Caramelised Red Onion and Pistachio.
